Sourdough Workshops
Have you ever wanted to learn how to make and bake a loaf of beautiful, health giving sourdough bread?
Classes are limited to ten people so you get to make a loaf with your own sticky little fingers, from start to finish….and watch it grow and develop before your eyes!
Wendy will guide you through the process with lots of hands on practice and a complete set of notes to take home along with your own loaf to bake next morning.
This is a full day workshop starting with a delicious morning tea on arrival at 10am for a 10.30 start and a generous lunch featuring goodies we make right here at Girragirra. Finishes around 4 pm
Cost: $220

Farmhouse Cheese and Ferments
Learn how to make some simple cheeses and your own health giving probiotic fermented (cultured) foods including milk based ferments like kefir, yoghurt, cultured butter as well as fabulous vegetable ferments like kimchi, kraut and probiotic drinks like kombucha. Workshops are limited to ten people so you get lots of opportunities to be hands on and ask questions.
You’ll have a lot of fun and leave with:
hands on experience
a comprehensive set of notes
your very own cheese pet (kefir grain) and kombucha pellicle
loads of ferments you have made on the day to take home and enjoy.
A Girragirra style morning tea and lunch in your tummy featuring all the goodies you will make on the day.
This is a full day workshop starting with a delicious morning tea on arrival at 10am for a 10.30 start getting hands on with all things milk, a break for lunch around 12.30 featuring all the goodies you will make on the day and a wander around our permaculture food garden then an afternoon discovering the basics of probiotic drinks and veggie ferments finishing around 4.30 pm.

ACTIVITIES
Visit the gorgeous town of Forbes. Built on the flood plain of the Lachlan River, Forbes is picturesque year round and an absolute oasis in our hot western summers. It’s a town steeped in the history of the 1800’s gold rush, wild and woolly bush rangers and of course farming of every description. Add to this a gorgeous little boutique shopping centre and a championship Golf course.
For the nature lovers, the River is a huge draw card for fishing, canoeing or just sitting back and watching the many birds and the odd human that call it home. Gum Swamp Bird Hide is birdwatcher heaven – just four km out of town and, ahem, only a 3km return stroll from Girragirra. It’s possible to observe over 60 species of birds in just a few hours with a number listed as threatened or endangered.
Head 30 minutes north and visit Parkes, where you’ll find the CSIRO radio telescope, famous world wide for beaming back images of man’s first steps on the moon. Affectionately known as The Dish, it was the star of the best Australian movie ever called strangely enough “The Dish”.

“With a whopping 10KW tracking solar array sitting out there in the paddock, quietly doing its energy creating thing, it’s pretty obvious that we’re fans of renewable energy.
These panels create around 24,000 KW of clean green energy a year – enough to run 3 or 4 Girragirras. We feed that power into the grid and buy back what we need, though with the current buzz around battery storage we may be able to store rather than buy, while still sharing our excess via the grid.
Setting the solar panels up to track the path of the sun across the sky delivers around a 30% increase in total power generated and it’s interesting to watch the incremental moves of these giant 3m by 4.5m arrays if you happen to be nearby, doing a bit of fencing or chook wrangling or day dreaming.
Then there’s the solar hydronic hot water and underfloor heating system, plus an Electric Car Charger.”

Gum Swamp is also home to Varanus, the first sculpture on the world class monumental sculpture trail between Forbes and Condobolin so we’re great place to begin a tour of Sculpture Down the Lachlan, a permanent, inland public art trail stretching 100 kilometres between Forbes and Condobolin, along the meandering Lachlan River featuring twenty sculptures by some of Australia’s leading creatives.
